Benefits & uses
Key compounds and nutrition
Cinnamon (Cinnamomum verum) gets its sweet, warm flavour from cinnamaldehyde, along with eugenol and antioxidant polyphenols, which are widely studied for their antioxidant properties.
True cinnamon contains much less coumarin than cassia. Several markets set limits on coumarin in foods, which makes true cinnamon the preferred choice for products with a high cinnamon content.
Traditional use
Cinnamon has been used in Indian and Ayurvedic tradition for centuries as a warming spice in teas, sweets and spiced rice, and in traditional digestive remedies.
Why manufacturers buy it
- Bakery and cereals: cinnamon rolls, biscuits, granola and breakfast cereals.
- Beverages: teas, chai, coffee blends and spiced drinks.
- Confectionery and desserts: chocolates, puddings and sweets.
- Spice blends and supplements: garam masala, pumpkin spice, and cinnamon capsules.
